dynamic disks basically mean that you can do 'more' with them, such as expand them on the fly, and span them across different disks. I would stay away from them, as I have had a few disastrous experiences with them.
The boot sector also gets moved to the end of HDD instead of start, normally you would only make a drive DYN if you Raided them not to say you need to.
