Basic sauce recipes - suggestions?

Sorry - was it causing you to have sleepless nights? ;)

Thanks for the ideas. Exactly what i was after.

I think i need to start using tinned tomatoes a bit more and experiment along the way.

Yup. I've been awake since the 13th of August and watching this thread like a hawk, at least between my fatigue-induced hallucinations.

A basic cheese bechamel sauce.

Heat equal quanities of butter and plain flour in a pan till it starts go go brown. A teaspoon of both is plenty for one. Add half a pint of warmed milk slowly and keep whisking and it will thicken. Add cheese and season.

PapaLazaru says it best. If you want to get fancy, crush a clove of garlic with the flat of a knife, put it into the milk along with one bay leaf as you heat the milk. Remove before mixing with the flour/butter mixture (aka roux).

Also, I couldn't help noticing you use antarctic silver thermal paste, it's arctic silver :P..... sorry /pedant

First try last night using soft cheese (knockoff philadelphia) to make a pasta sauce.
Fryed up some chicken breast in a wok, threw in some broccoli towards the end.
Started Boiling pasta.
Took the wok off the heat, added pesto mixed it all together, was damn tasty :D
