Beans on toast

Just recently I have been making BBQ beans on toast for me and my partner's Saturday lunch. I got the recipe from a book and honestly, it's amazing.

What you need:

1 Tin of cannellini or butter beans
2-3 cloves of garlic
1 large red onion
3/4 of a jar of Napolina Passata (I prefer garlic and basil)
a dash of red wine vinegar
Salt and pepper
1 tsp paprika
2 tbsp butter
2 large tablespoons of BBQ sauce.
grated mature cheddar
Sourdough

Chop the onion and fry this in 1 tbsp of butter and a good pinch of salt for 5 mins

Chop finely or crush the garlic and add with the tsp of paprika and fry this for 1 minute.

Add the passata and the rinsed and drained beans and allow to thicken and heat up for about 5 mins.

Meanwhile, cut two large, thick slices of sourdough and toast and butter these.

Add salt and pepper with the red wine vinegar and BBQ sauce and stir well.

Melt the rest of the butter through the beans.
Pour over the two slices of the sourdough and sprinkle grated cheese over the top.

I find this is enough for two people at lunchtime. If it's an evening meal then double up for two people.
I think it tastes and smells amazing and is nice and healthy.

Or you could just open a tin of Heinz but it won't taste like the above.

Big BIG fan of beans on toast. A wonderfully underrated weekend brekkie/lunch.

We usually go for jazzing up some Heinz with onions, balsamic, cheese and some Worcestershire but will give this a go with the bean base from scratch.

Cooking beans on a hob too over a microwave is next level. I don't know why but they taste so much better and thicken up so much nicer when done on a hob vs microwave.

Jesus, I didn't realise i felt so passionately about BoT.

If I had to guess the process of stirring them breaks some beans and the proteins and starches inside then thicken the sauce whereas in the microwave only the liquid is heated so no thickening.
 
Pimp your beans on toast/baked potato with blue cheese. Makes things much more interesting!

Those beans do look great, but seems like a bit more effort than I’d like to go to for beans on toast.

To make it more BBQ flavoured without the BBQ sauce have you tried using smoked paprika, cumin and chipotle chilli flakes? Would be my go to to enhance the Smokey flavour.
 
As above, I always felt BBQ beans belonged solely in the campsites of cowboys and Starfleet captains.
Plain beans seem far more appropriate for toast, so should be of sufficient quality and flavour that they do not require fancy additions... beyond perhaps a screw of pepper to compliment the salted butter of the toast.

Baked potatoes are another matter of course, in which case any given individual has free rein to go as wild as they like.
