I'd agree with the general consensus on the forums here, if you can justify the cost then grab yourself a quad core, but otherwise I'd stick with what you have for now.

For Video Encoding - Quad core is a fair improvement over Dual core clock for clock, but at 4GHz it would make very little difference/improvement for your 4870 gaming fps. £200 may or may not buy you a 5850 (if pricing drops to that level) - a 5850 graphics upgrade would make far more of a difference than any cpu change to game fps.
We are just on the brink of a 32nm technology change, there will be plenty of s775 quads discarded onto the market as people upgrade. If you feel your machine is adequately fast, then there is no pressure to upgrade, just keep an eye out for a bargain, then upgrade.
