Take a tub of mascarpone cheese turn out in a bowl. Add something tipsy, I like Drambuie but other alcohol works. About 1 shot for 250g generally about right but adjust as you go. Mix that in which will loosen mascarpone mix you’re aiming for whipped cream consistency. Add icing sugar mixing in to taste but one tablespoon is good start. Chop some soft fruit, raspberries and strawberries are my favourites. Add fruit and mix to a nice glass sort of layering it up. To finish crush a biscuit, shortbread is best but digestives also good, and sprinkle smaller lump and crumbs on top.
Quick easy and very tasty, it’s also easy to modify to what you have on hand.
