What you should do is get a single 1080 for now, and in about 6-12 months time when drivers have matured pick up a second 1080. purely for gaming i don't think there is a huge difference between a 6700k and 6850k but they might program games to use higher cores in the future and gaming consoles do use 6 cores.
You could look at a 5820k or a 6800k which would be the best route to take, you dont need a second 1080 right now

6700k is a great cpu and will offer fantastic performance with 2 1080s, or you could grab a 5930k or 6850k 
even then the 5820k would suffice whilst not being much more expensive than the 6700k.
