I quite like this one, the trial only gives you a very small sample though IIRC.

PTgui seems to be a popular choice.

For linux users it has to be Hugin:

http://hugin.sourceforge.net/

Probably not the easiest of software to use but it is very powerful.

It creates a small image to show you what it will look like about 1000px across or so, but you can then edit the settings to make it as large as you want.
