Best way to cook .......

isnt oven-cooking better for thick fillets? unless you want it charcoaled on the outside and raw on the inside?

I'll stop there and add something productive to the thread. I'd just practice it. I like mine medium rare, and after cooking steak a few times I can pretty much judge how to get it right regardless of the size.

Well, obviously it's not going to work well on a cheap £2.99 Netto steak. You need a decent cut, but I thought that went without saying when you're cooking a good steak.

Yes if you want to cook something incredibly evenly, do it in the oven or a microwave.

I prefer the taste of a medium rare pan-fried steak though, with some texture on the outside, and a different flavour and texture on the inside. If you oven cook or microwave a steak (especially something as nice a fillet :)) you're cooking it uniformly and it will basically taste the same as any braising steak you care to cook.

I agree with everyone here. You can oven cook steak and it does taste nice but pan fry is the way to go. Even been to a resturant where they serve oven-cooked steak? It's just not the right way to go. If it was then we would all be doing.

Steak needs to be cooked quickly. Joints and stewing steak slowly.

Have you eaten properly cooked oven steak? If you do it right it doesn't turn into a stew. It's just a very tender steak. It's not sloppy or falling apart as you eat it.
 
So back to the point I want the grill RED hot but how long for well done to med. And yes i'm cooking it with some nandos hot sauce to.

So am I right in thinking baout 5 mins on each side on a red hot pan with a little oil ???

Yes. I've been to restaurants where oven cooked sirloin steak was on the menu.

The reason many restaurants don't however, is because of the time it takes. Takes about 45 minutes, usually way too long for just a steak, easier to whack it on a grill or pan.

yeah i understand where you're coming from, im much the same, but as i understood it; if the steak is a good few inches thick, you wont be getting a perfect medium-rare if you pan fry it. I always thought that was the done way - over for thick fillets, pan for steak an inch or so thick:)
 
If it's a few inches thick then it's a very difficult steak to cook in a pan without it being rare in the middle and charred on the outside. In such circumstances I would (I'm not a chef but I do like my food!) sear the steak on the outside, get some nice colour in a pan, before putting it under the grill for a bit to cook the steak a little more thoroughly in the middle.
 
Well all this steak talk has lead me to my fridge.

All I could find was some Tesco Value pork cuts.

Time to do some of my student cooking magic.
 
Pork is one of my least favourite types of meat (apart from in ham/bacon/sausage form :o)

Cant remember the name of the guy who said that, but hes the head chef at the resteraunt that was voted best in uk.
 
A fillet steak oven cooked is
1 sealed on all sides on the stove in a pan then
2 pan placed in hot oven for between 6-10 minutes.

Thats all it needs.

I like to cook individual beef wellingtons with fillet steaks.

Recipe available if required.
 
Oven cook steak is nice, but you got to get the seasoning right or it'll taste like stew. I agree it is tender thou, i was really suprised as well. But usually I just wack it this.

The thing is made of Cast Iron, I swear it probably could stop bullets !
