isnt oven-cooking better for thick fillets? unless you want it charcoaled on the outside and raw on the inside?

I'll stop there and add something productive to the thread. I'd just practice it. I like mine medium rare, and after cooking steak a few times I can pretty much judge how to get it right regardless of the size.

) you're cooking it uniformly and it will basically taste the same as any braising steak you care to cook.
