Any recommendations for a good blow torch that isn't a waste of money? Want to get something that will last, even if it means paying a little more than the tat you can pick up from Amazon?

If you don't have one you can use the grill to burn the sugar or caramelise it even.

Or another way we use in the kitchen is heat a spoon and then go over the sugar top. Just be careful because the spoon can get hot to touch.

I myself ain't a pastry chef. But I am a sous chef and have seen my team use those methods if our gas runs out in our touches.

Good luck.

Smaller ones like Raikiri posted are fine if you are hosting 4 or less. Been using a similar one for a few years now. If you are planning to have big dinner parties then go for a plumbers torch.

That looks good. Do you keep it attached to the can or do you disconnect once you're done using it?

Keep it attached.

I mean I'm a chef in a professional kitchen that frequently serves 150 people a day. They work just fine.

Yeah, at most I'd be using it to party of six, and the occasional family gatherings where's there's 16-20 but it won't get daily use like a pro would.
