Thing with going Ivy is with PCI-E 3.0 you're set for a decent few years with that CPU and platform.

Yeh I am hoping if I go Ivy, with a 3570k, 7950 and only using a single 1080p 120hz monitor I will be set for at least 2 years.

You should at least try overclocking your Phenom II before you sell it, even with the stock cooler- it'd be criminal not to try an OC on a Black Edition chip. 
Just bump it up a bit and see if you still get as bad a bottleneck. (Make sure you have your RAM as fast as it can go too.)
