I have a bread machine which I only really use occasionally when I don't remember to buy bread. The reason is that the bread always tastes like it's come out of a bread machine. I use the same recipe and ingredients as I'd use when making bread by hand but it tastes much different in the bread machine. Does anyone have any recipes/tips to stop the bread tasting like bread machine bread?

It's to do with the temps, ovens are preheated and don't kill the yeast off during heating, also dough just cooks better if blasted in a preheated oven. You can try putting in oven for 20 mins on full heat then into machine or play around with settings on machine.

Which make and model is the machine?

If possible you could always just have the machine make the dough and then bung it in the oven once it has proved etc.

It's a Breville BreadMaster (I assume that's the model name, it's really old as it was given to me by my parents as they were going to get rid of it).

I hadn't considered that the temperature could make a difference. I will try making the dough in the machine then putting in the oven, though it is handy being able to put the machine on and come back to a finished loaf
