Breakfast Burrito!

Hi Guys,

First recipe post here so go easy. A little something that i think is nice to have at a weekend instead of your normal fry up and its very simple to make. I'm sure many have had one of these at some point while on holiday in the US, but for those who haven't I think you're missing out I give you Breakfast Burrito!

Makes 1 Burrito!

Ingredients:
1 small potato
1 small onion
2 sausages
1 rasher of bacon
2 egg
2 flour tortillas
Grated cheddar cheese (or your choice)
Shop bought salsa
little oil/butter for the pan

The ingredients list is not set in concrete but you do have to be careful not to overfill the burrito. I sometimes substitue the bacon for an extra sausage, or more egg.

Prep + Cooking time - 30 minutes

1. Halve then slice onion

2. Dice potato into small cubes

3. Skin and chop sausages

4. Slice bacon into small pieces

5. Fry onion and potato in a little oil or butter for 5 minutes until they start to colour.

6. Add sausage and bacon and continue to fry on medium heat

7. While frying, whisk eggs with salt,pepper and scramble in a seperate frying pan with a little butter. Rather than whisking constantly try to fold eggs as they cook so that when done they form a rough rectangle.

8. Place 2 tortillas on slightly oiled baking tray so that they slightly overlap each other lengthways.

9. Place egg in middle of tortillas, remove sausage,bacon,potato,onion from
heat and place on top of egg (note you may have some left over depending on how big your ingredients were to start with)

10. Spoon over some salsa and sprinkle with a small handful of grated cheese

11. Fold tortillas across to cover filling and roll over so that the point at which they cross is now on the bottom touching the baking tray. Fold ends of tortillas under themselves like you are wrapping a christmas present. (If you've overfilled at this point you can use cocktail sticks to hold it all together)

12. Spoon over more salsa and another handful of cheese and place under hot grill for 5 minutes or until cheese is bubbling.

A friend of my wife, who is mexican/american but lives in France near us went back to the states to visit family before Christmas as her mother passed away and managed to put on 20lbs!! in 4 weeks... :o

Seemed fitting :P
