I'm back baby!
So I was up early this morning with the kids. Decided I fancied pancakes but didn't have any plain flour :(

I wanted crepes but instead I had American pancakes with self raising flour. Turned out alright!













Very tasty :)
 
Dead simple.

Get a cup (no matter what size any mug will do).
Crack an egg into a mixing bowl.
Add a mug of self raising flour.
Add the same amount of milk.
Add a pinch of salt (small pinch at that).
Whisk until smooth.
Pan on medium heat.
Butter a non stick pan.
Ladle some batter in.
Turn over as soon as you see bubbles coming through.
Remove when golden.
Put the next batch in (should really wipe out the pan and re-butter but I didn't)
 
If it's American pancakes (yancakes :p) then I put in a little sugar and vanilla essence into the mix before it goes onto the hob, as well as a teaspoon of baking powder as it gives them a lift and makes them fluffier. Did you just have them dusted with icing sugar or have anything else? Bananas, blueberries and honey make a great combination.
