With all of the hype surrounding Tears of the Kingdom I thought I would give the previous entry a good effort. Being my first Zelda game I wasn't sure what to expect and at first I was enjoying the many different mechanics on offer but, after leaving the Plateau the game feels somewhat aimless and my enjoyment is starting to waiver.

Is there something I'm missing? Am I not in the correct mindset for this game?

I'm not big on open world games, but loved BOTW, and am loving the (admittedly fairly short) time I've spent on TOTK as well.

I think you do need to adjust your mindset. The joy of the game is in exploring what is a remarkably detailed and cleverly put together landscape. It's not your usual open world fare, where if you head somewhere which doesn't have a map marker you're just going into no man's land. Every bit of the game world has a point, whether it's a little hidden puzzle, a side quest, or something else. Unlike other open world games, which are about advancing the story by completing quests, this is a game in which the excitement (to me) comes from exploring the landscape and the game world - the quests are almost a bit of a sideshow.

I generally love story driven, pretty linear games, but BOTW blew me away.

The aimless feeling is (in my opinion) because it doesn't hold your hand as much as a typical game in terms of story progression - you have to go and look for it to some extent.

I find a lot of other open world games, will aim to keep you only in certain areas etc. (say Assassins Creed) by putting over strength enemies to discourage you exploring areas until they want you to explore them, whereas in BOTW you can pretty much do as you please after the plateau - even to the extent of just going straight to the castle to try and take on Ganon if you really wanted to.

Sounds like you've got to the point where any sense of linearity disappears, I think if you're upgrading the slate you've probably done the quest to meet Impa etc. and the bits shortly after that - so now you've got a bunch of side quests open, loads of shrines to go and find etc. and the 4 divine beasts to go and play through. So pick which one you want to go to first and get going :p
 
I'm going to start by finding the towers and unlocking the map.
That’s what I did. Don’t stress it just explore. You can track quests in the adventure log but it doesn’t actually matter as you’re free to do whatever. There are some pretty awesome surprises along the way but you have to be prepared to just go with it. ‘What’s over there? Well, let’s go have a look!’ sums up the game for me. As above I am mostly like play the story play the story but with this you just have to slow down and enjoy the ride.
 
I stumbled across my first memory and Impa gave me the Champions shirt which is kinda cool. I've been killing Guardians and found some random fish guy in a pond who has pointed me toward his prince... I'm playing this on PC, how it all crammed into a switch is beyond me.
