Budget PC for son

I also would like to build it with him as it could be a fun project and get him into some practical side of things

Yes. A thousand times yes. It will be a great experience for both of you.

In an ideal world, he would be in the £300-£350 range leveraging used and potentially new parts.

I agree with @pastymuncher: unfortunately you'll need to basically double that for new parts, and £350 won't buy you much of a used PC either.

What you guys doing for a monitor?

Son's PC is half the speed as mine but because he has 240hz gsync it's a dream to play on... I often sneak in to play a few games as my monitor is absolutely rubbish for gaming

He got a monitor for Christmas that is sufficient (I think 165Hz/1ms 27") to plug his PS4 into so he will be good to go there!
