Included, but can probably push it over a little bit too.

1080p should suffice. And I'm not sure if I'd make use of 120hz, although I could be convinced if it's not excessively more expensive.

Okay, taking on board all that advice (and I apologise for sticking with some things, like the case and keyboard, I just really like them, I always feel a bit of a jerk ignoring any advice from helpful people) this, I think is my final list: Unless anyone can think of anything missing, or anything wrong, this is what I plan to go with. End of the day pc spec (cases and such) are personal prefferance you have a lot of good components now that should last you for quite a while BUT why oh why would you want a controller ! mouse and keyboard all the way !

Hey, we're PC gamers, why limit ourselves to only one control scheme?
Of course, Mouse and Keyboard all the way for FPS, RTS and what-have-you, but platformers, spectacle fighters, beat 'em ups and 3rd person games that aren't shooters are usually a lot better with a controller. The PC gamer should have options, not limitations. ;)
 
Do you plan on xfire in the future? If so you'll want the 750w model, the 620w will prob be enough if you plan on leaving everything at stock but the 750w will allow for overclocking etc.
 
You don't need thermal paste as some comes preapplied to the CPU cooler, will only need some if you need to take the cooler off again for whatever reason.
 
as said, you don't really need it now, but if you want to buy some, get a non-conductive paste such as IC Diamond 7.

I still use AS5 as I had loads, but when that runs out, I'm getting ICD7 instead.

No need for i7, AMD GPU would be better, no need for Win7 Ultimate, case is old (personal taste), motherboard is pretty basic not something I'd expect in a 1.1k build, cooler isn't great, RAM isn't the best for a 1k+ build, PSU isn't the best quality and would want something more than 500W for future proof. Do you already have a monitor, SSD and/or hard drives? Let me spec something up.

The CPU cooler you've speced will come with pre-applied tim, all CPU coolers(air or closed loop liquid coolers) come with pre-applied tim not just the one that comes in the box with the CPU. Well if you go 'true' water cooling(I.e not the closed loop ones like the h100 etc) you need tim for the waterblocks(CPU, GPU etc depending on how far you go).
 
Huh... things have changed it seems. Wasn't that way a few year ago was it? Or did I just buy a really budget cooler last time? :P
