I may be a bit confused by what these are. The name suggests they're merely a cover for a Hard drive you may already own. Is this correct?

A caddy is just to hold a drive you already own (check whether SATA or IDE and what connections it allows externally), if you need a portable backup solution with a hard drive provided then look here. :)

Don't "need" one as such, would be very useful between home and University I'm sure. At the moment I'm walking about with my 250GB HD in a bag and opening my case and plugging it in. The transfer speed is very quick, faster than what I would probably expect with a USB connection.

An internal drive will almost certainly be faster than an external one, USB is not particularly great at sustained high speed transfers. However external drives are quite neat and you can use them almost anywhere, including when you can't open the case of course. :)
