Can I add (chain) a wifi router and ether net switch onto VM hub as below in my diagram?

In this situation there would be two active wifi connections, one in the loft and one on the vm hub

Yup, thats fine. If you plug the vmrouter into the wan port on the second wireless router, you will have to enable DHCP and the clients on that network won't be able to talk to the clients attached to the VM router.

If you plug from VM router into a plain ethernet port on the wifi router, you avoid this.
 
I can't figure how to set up the WiFi router. I tried disabling dhcp on the to router and giving it a fixed ip of 192.168.0.50 but that didn't work. I plugged the VM ethernet into the Wan port and PC into a LAN port.

I also tried plugging the VM Ethernet into a LAN port and the PC into a LAN port too , but that failed to work.

Every time I changed the router it would screw up the VM hub too so I had to keep powering it off.

Any ideas?

There's no reason why it shouldn't be working.

Set the management IP and disable DHCP BEFORE you connect the router the rest of the network.

Connect LAN-to-LAN. The WAN port shouldn't be used.
