A lot of the more popular games come out for OSX, but to play games at any sort of good framerate, only the more expensive machines will really handle it, like the bigger iMacs and the Mac Pros.
If you're really into your games, running a mac as your only machine isn't a great idea.
as for Linux, CS:S should work using Cedega along with other Source games, id software have also released their games for Linux, titles include Quake and Doom.
The games I play on OS X are: Darwinia & Warcraft3
I wanted to play my pc games I own on mac but it seems all of them but WoW and Warcraft3 require you to purchase them again as mac versions (I did try cs:s on crossover but it was a bit slow)
I cancelled my WoW account a few months after it was released as it took up way too much time so have never tried it on OS X.
