Having just asked for my PAC code and cancelling my current o2 contract as their upgrade offer was frankly a joke, I was told my PAC code will be with me in a few days, and that my account will close in 30 days.

If I now go and sign up to a new contract elsewhere and port my number to a new provider before the end of the 30 day notice period will o2 throw a hissy-fit? Would it be a problem if my number was ported whilst my current contract is still ongoing?

no, it would just close that contract on the day you port over. Make sure you port before the contract ends or your number will be lost. Only active numbers can port out.

Aye, you have 30 days to use the code, requesting a PAC counts as your 30 days notice. Once you have it, you can use it right away.

The PAC is valid for 30 days as already mentioned but your existing contract will not, necessarily, end on the day your new contract starts. If you were advised, when requesting the PAC, that your current contract has another 30 days then that suggests to me that it has a 30 day notice period. Although you won't be able to make use of the old contract once your new provider connects you, you will still end up paying for the balance of the contract - til the end of the 30 day period.
