Been recently getting into cooking, especially various meats and would like to hear how some you would prepare a simple chicken dish.

Requirements:
Quick to make - 15-20 mins max
Not too complicated
Method is up to you, grilled, stir-fry'd etc.
List the extra ingredients and sauces used

Bonus points for taste:D

Grilled with lemon is the simplest and tastiest I've tried. BBQ sauce also rocks.

If you're going whole chicken rather than breast, stuff it with garlic and oven cook it in its own juices. Mmmmm.

I'd make fajhitas. Discovery do an awesome sauce jar which has spices in the top and then a sauce. all you need to do is chop up some chicken, onion and green/red/yellow peppers, mix with the spices and a little oil and then fry until the chicken is cooked then add the sauce and bring to the boil. Stick that in some tortillas and you're sorted.

Nope. I did that to myself too.

Dauphinoise goes with chicken almost as well as it does with steak too, though with the garlic chicken it might be a bit much.

Place a chicken breast in a folded piece of clingfilm and flatten with a rolling pin or meat tenderiser. Add some olive oil and a large knob of butter (about equal quantities) to a frying pan. Throw in some some sliced garlic and then season the chicken with salt and pepper and add to the pan. It should cook in around three minutes a side.

The garlic can be removed if it blackens as it will become bitter. You could also add a little chopped chilli for a kick

I usually have that in some buttered crusty bread :)

Stir fry:

Buy chicken (you can even buy "stir fry chicken" already cut into easy stir fry sized chunks), pre packed stir fry vegetables, noodles and soy sauce

Fry chicken in a wok or very large frying pan until cooked, add pre packed stir fry vegetables. Whilst doing this boil noodles according to instructions. Add noodles to frying pan and lots of soy sauce. Stir. Fry some more.

Easy and very tasty.

Chicken wings. Cut off excess bits and chop in two. Douse with a little honey and lots of soy sauce, cook in oven at 200*C for about 35-40 minutes. Eat a whole tray of those damn things I will.

Chicken fried rice (for 1).

Boil 100g of long grain rice til done (12 minutes) then rinse thoroughly in cold water and leave to drain, you're going to fry it so drier is better. Keep it cool preferably in the fridge.

In the meantime, slice chicken breast into strips. Finely chop some garlic and ginger (if you like it). crack an egg into a cup and give it a quick stir with a fork. Slice up a couple of spring onions and get a heaped tablespoon of frozen peas ready. You'll need salt and some light soy sauce too.

Get a wok or medium pan up to heat and throw in the chicken, cook it through and put on a plate. Then add the egg to the wok. As it starts to solidify give it a quick stir and throw in the rice. Then add the rest of the ingredients, as well as the chicken but apart from the salt and soy sauce.

The time to add them is when you're happy that everything is piping hot. Just add a pinch of salt and enough soy sauce to colour the rice.

Then it's ready to enjoy :)

That will take longer than 20 mins mate, the rice itself will take 15 mins, then you can't really use it til it's at least cool.

Pfft the cooking will only be 20-25 minutes max, maybe the preperation will take longer. The rice however could be done the day before and the chicken could be leftovers. The recipe is still nice though :)

My dad owns a Chinese, can do a Chicken Fried rice in about 3 mins flat :p

But it is the prep that takes time, since the eggs are already cracked and whipped, the chicken are already sliced, the beg are already chopped.

Dice it, let it soak in a marinade of finely-chopped tomatoes, lemon juice, oregano, a dash of olive oil and optionally chopped chilly, then skewer and grill. Prepare a sauce of chopped tomatoes, onion and lemon juice (no, you can'tr recycle the marinade, unless you like having salmonella:p), and pour it on top when it's done. Rice, salad, or both as an accompaniment.

i decided to experiment the other day as im alone in my house at uni atm, and had some spare chicken.

First I toasted a slice of bread, then tore it into little chunks and went at it with a hand blender to make toasty-breadcrumbs. Then i added black pepper, chilli, and oregano to the breadcrumbs.

I crushed some garlic and fried it in copious amounts of butter, then coated the chicken breast in this mixture. I then rolled the chicken in the breadcrumb mix and stuck it in the oven at 180. Turn over when one side crisps, serve when the other does.

It was sooooooo good. Never before have i randomly played with food without clear intent and made anything edible. This was like a breaded chicken thing you would buy except i knew what was in it and it tasted better :D
I know this takes a bit longer than 20 mins, but the prep before the oven takes 10 mins max, then you can wonder off for a while.
