Christmas bird/meat thread

Bought my dates and smoked bacon yesterday and ordered my fillet of beef to be collected on the 23rd. She asked me how much I wanted, I said 3kg, she said they come in 2kg fillets, so I ordered 2... 4kg of beef for 7. Seems legit.

Eating mince pies now. I think tonight I'll cook up one of my hams. I might make up some mulled cider too but unsure how long it'll last? I'll no doubt get ****ed tonight and get shouted at.

Out of interest, what method are you using for your hams? I might make one this year. Previously they've been a bit blah as I've not left them in their initial brine long enough and they ended up a bit grey in the middle.
 
Don't know what the parents have got planned but for me and my house mate it will just be one big lump of pork with plenty of lovely crackling :D
 
Turkey brined in my own specialist saltwater and bourbon solution, plenty of bacon and stuffed with a game, port and onion stuffing.

All local and top quality.

See, while I like a goose, my family do not, and you'd need to cook multiple geese to feed them. The virtue of the turkey is it will feed a table of people and then you'll always have leftovers for boxing day.

Of course I'm also doing a gammon joint for boxing day along with various cured meats, sausages and my home made sausage rolls and pork pies.
 
You are BOTH right. I had some "bates" or bacon dates the other month and my god they are amazing. Like, seriously. Damn I'm going to have to make some now.

We call those Devils on horseback... Not sure why though :p

We are definitely having pork belly, which is great as it is the greatest meat product in the world.

My brother is obsessed with those bird in a bird things and I think he has gotten his way again :p

I'm a huge fan of the pigs in blankets etc. but also love all the different types of sausage meat stuffings... every year i wonder why i don't eat this kind of stuff all year :D
 
We're off to the inlaws' on xmas eve until the 27th and not going to my folks until the 29th so I'm not going to get any decent xmas food or cold cuts. :(

We usually have a turkey but I'd love to do a goose one year.
 
We're having goose - we often do I much prefer it to turkey. :)

Sometimes we have beef Wellington as well or instead. We eat far too much at Christmas! :o
 
Having goose this year.

Glad others have discovered devils on horseback. They are amazing! I have a Medjool date sat in front of me now but I've stuffed it with Stilton. No time for the bacon at this hour :p
 
Christmas eve is family party at my house every year so big buffet and my dad is bringing a nice glazed ham no clue what he will glaze it with this year he likes to change it each time

Christmas day will be Rib of beef all normal trimmings it is the only day of the year we have a roast as even though i love it the time it takes i can make many other equally nice meals.
Boxing day no clue yet but if i am lucky might be able to make some epic sandwiches with leftover beef
