Christmas Cake 2011

Hey Gimpymoo - soaking them overnight would have been fine non-refrigerated (might have been best to cover the bowl with clingfilm though, but either way i'm sure it'll be fine!)

As for the tin size, either 8 or 9 inch will work fine. Good choice on the Circulon - I have their entire range I think lol, can't beat their non-stick coating and overall build quality!

Most of the recipes I see, advice to wrap the tin in paper, but using my Circulon tin, I don't need to bother with that extra faff :D
 
So the parchment is only there to prevent sticking?

Any thoughts on the use of the Amaretto?

No idea what to expect. Could be one of those brain waves which equals fail - lol.
 
Mostly yeah, although the addition of extra paper (newspaper etc) wrapped around the tin, is to prevent the outside of the cake burning during the long cooking time... but i've not had that issue when using my Circulon tin!

Not sure about the Amaretto - it might be a bit overpowering, or it might prove to be yummy.... be sure to let us know haha :D

Just had a taste of the fruit just now and it does have a kick :)

The recipe I have is for 8", if I placed that into a 9" tin, would that still be OK?

I did order a set, but the seller mailed me to say the last 2 sets had were dented :(
 
Putting it into a 9" tin will be fine tbh. It might not come out quite as "tall", but not really drastically different. I'd check the cake maybe 15/20 mins before the end of the baking time though, as it might need slightly less time.

As for tins, I prefer the see-through plastic ones, or failing that I just use choccy tins :D
 
All the Christmas cakes look awesome, if anyone is interested in making the best mincemeat my family makes the normal kind, any old recipe, but as a family favourite put banana in it. This makes the whole thing a bit more special and most people comment that it tastes nicer but can't put their finger on what we've added. I think it makes the whole mincemeat moister and adds a unique twist.
 
Big bump, but I'm totally inept at cooking but just made a christmas cake as a present for grandparents! Tesco are selling 'cake in a bag' things:

The one on the left used to be £10, dropped down to £5 so mum bought one since she messed up the initial cake attempt, then they dropped down to £2 so I picked one up yesterday! Its super simple, everything's in its own little bag and everything. And there's also a video provided on how to make it:


Unfortunately, I found this after the fact, but hey! Also, at mum's advice I didn't use the marzipan and royal icing they provided, instead using some tesco marizpan since we always completely cover the cake, not just the top, and she also has a thing about making her own royal icing since its done using uncooked eggs, so we just got a couple of bags of silver spoon that you just add water too. Its still got a couple of hours to go in the oven, here's hoping it comes out well :D
