Shut up and Sit down do a good how to play video on YouTube although it does only cover the 1 v all gameplay and not the skirmish or app but it still gives a good overview.

Not at all. My 7yo has had Lego for several years. They do kits for younger kids too - Lego Junior I think they’re called.

just choose something small and relatively straightforward

Eh? My two have been using Lego since 3 years old, even some of the harder sets like Minecraft.
