Jonny I'll get one from my dear old mum who was given a recipe from her aunt that she has used every year to make the most fantastic christmas pud. It's so rich and full of flavour yet so light in texture it's unreal, perfect for after that big turkey dinner
***Pudding Recipe ***
*3ozs Breadcrumbs
*6ozs Plain Flour
*2ozs Ground Almond
*8ozs Dark Brown Sugar
5ozs Butter
3 Large Eggs
*1 level teaspoon Salt
*1 level teaspoon Baking Soda
*1 level teaspoon Cinnamon
*1 level teaspoon Mixed Spice
*1 level teaspoon Ginger
*1 level teaspoon Nutmeg
1 small tin Crushed Pineapple (Drained)
3ozs Cherries (Chopped)
grated rind 1 Orange
grated rind 1 Lemon
1 large spoon Marmalade
12ozs Mixed Dried Fruit which should be soaked overnight in 3/4 cup of Brandy
Rub butter into flour (until fine like breadcrumbs) then add ALL dried ingredients *
Add beaten eggs, dried fruit, cherries, rinds, marmalade, pineapple and mix well.
Grease well a pudding bowl. This pudding mixture makes a 3 pint bowl or divide into smaller.
Seal bowl/s with greaseproof paper and tinfoil with pleat and tie firmly with string / cord.
3 pint mix simmer gently for 3 hours (watch water level!)
then on xmas day simmer for 1 hour before serving.

What I can say is, I've had this for the past few years
and honestly its gorgeous and just perfection as a pudding after a big meal because as mentioned it's just so light in texture.
