Christmas pudding recipe recommendations

I've lost my christmas pudding recipe :(

Anybody got a good one they can recommend? The one I had was quite light and very zesty and fresh and was a recipe published in the Metro about 2 years ago. Looking for something like that or possibly one made with stout.

Jonny I'll get one from my dear old mum who was given a recipe from her aunt that she has used every year to make the most fantastic christmas pud. It's so rich and full of flavour yet so light in texture it's unreal, perfect for after that big turkey dinner :)

***Pudding Recipe ***

*3ozs Breadcrumbs
*6ozs Plain Flour
*2ozs Ground Almond
*8ozs Dark Brown Sugar
5ozs Butter
3 Large Eggs

*1 level teaspoon Salt
*1 level teaspoon Baking Soda
*1 level teaspoon Cinnamon
*1 level teaspoon Mixed Spice
*1 level teaspoon Ginger
*1 level teaspoon Nutmeg
1 small tin Crushed Pineapple (Drained)
3ozs Cherries (Chopped)
grated rind 1 Orange
grated rind 1 Lemon
1 large spoon Marmalade

12ozs Mixed Dried Fruit which should be soaked overnight in 3/4 cup of Brandy


Rub butter into flour (until fine like breadcrumbs) then add ALL dried ingredients *
Add beaten eggs, dried fruit, cherries, rinds, marmalade, pineapple and mix well.

Grease well a pudding bowl. This pudding mixture makes a 3 pint bowl or divide into smaller.

Seal bowl/s with greaseproof paper and tinfoil with pleat and tie firmly with string / cord.
3 pint mix simmer gently for 3 hours (watch water level!)
then on xmas day simmer for 1 hour before serving.

Only home folks and this was typed up for you as left on a note for me, the cook / chef / recipe owner is now winging her way
to Canada but if you have any questions about this I'm sure I can FB the answers :) What I can say is, I've had this for the past few years
and honestly its gorgeous and just perfection as a pudding after a big meal because as mentioned it's just so light in texture.

Please do DrunkenJester. I love Christmas pudding, never made it before though and fancy a tried and tested recipe.
 
Is it too late to make it now? I've never made it before and I'd like to give it a go this year. I've seen those Delia Christmas pudding ingredients boxes in Waitrose and was tempted to pick one up.
 
No, you can make it a day or so before Christmas if you like. If you make it in advance you can feed the pudding brandy or rum which will make it more boozy, but you could just make a more boozy sauce :D

I left word for my mum to drop the recipe in first chance she gets, I think it might be tonight but am working, so maybe get it posted up here Tuesday / Wednesday at latest. :)
