Massive traction increases body roll. Basically - if you're pushing the law of physics something has to give. On road tyres it's the tyre that will give.
On slicks the traction is so much more so the car gives.
Slicks themselves are not a problem - it's when you throw them on cars not designed to use them. Race cars that use slicks are set up accordingly.
It's not just plain cornering that can force a roll though - you could get a tap off someone or you might get a tiny bit of slip (bit of gravel for example) whilst pulling big g's on slicks and when they regain grip - you're upside down in no time, weight wants to go one way - tyres won't let it, weight goes over the top of the tyres.
