What's Viessmann parts availability like though? If they're new to the market are they well stocked?

I went with Vaillant just because I knew if I had any issues the parts are so common they're just falling out of gas vans.

a few months ago I got the Baxi 800 as it came with the filter and 10 year warranty and was less than £100 more than the 600 so was worth it for the filter and extra 3 year warranty. Get several different quotes.
