I'm just about to take advantage of the "This week only" offer on the i7-2600k.

What would be the absolute optimal Memory & Motherboard to complement this tidy bit of kit?

Also, What sort of performance boost does the 2600K offer over the 1366 i7's if any at all?

Depends what you want to do really.

Can't go wrong with the MSI boards (g65 is a cracker and very cheap) and the xms ram.

1+ for above comment, 65 is great and at offer price at moment is one of the best offers I have ever seen

Depends what your doing with the i72600k cpu

Gaming wise sandybridge performs better then the old 1366 cpus

In 3D rendering i72600k seems to win as well

1366 cpu seem better for video creation and encoding

All checked all the other encoding benchs and i72600k came slightly behind

Go for i72600k, best value cpu on market, well except i52500k lol
