Converting videos for iPad2 (in windows)

Everything I have is in 720p MKV/x264. I'm going away tomorrow and would like to take some films with me.

Now I need the most efficient way of storing some films on my 16GB iPad2 - I'm guessing that would be to convert to something iTunes likes and let that handle it, but I've no idea what I need to be converting to, bitrates, resolutions etc. Or what to use to do it.

Any suggestions?
 
Trouble with doing it that way is that I need to store the Videos in their original size, which means I might get two, maybe three films if I'm lucky.

I'm hoping encoded for iPad and added via iTunes the filesize will be reduced somewhat.

I really wish someone would hurry up and JB the iPad2 - then maybe my Camera Connection Kit and a 32GB SD would be a decent solution :P
 
I am currently using handbrake to convert all my mkv files using handbrake, add the files to the queue, select your output format and it gets on with it.

I'm thinking of doing this for my Ipad, does it keep the orginals as mkv and give you a new file?

How I do it also, although I rip straight from the DVD using HandBrake then to the iPad/iPhone.
