Cooking: American style BBQ

aww man reminds me of a show I watched in Canada every day. I got the DVD imported.

This man knows how to grill :D Licence to Grill rocks

 
Love that show, honest food done with care and expertise. Yeah the dipped rolls looted great as did that place who smoked there ribs for 24hours.

He just finds places that do the biggest and tries to eat it all doesn't he?

Honest food... maybe, but care and expertise? Are you watching the same show? it's just massive gunk on a plate half the time.

you're obviously watching selected parts of the show, some of the places he goes cook absolutely fantastic food with lots of care and attention put into the cooking. Just because they serve large portions don't mean there hasn't been any love, care and expertise gone into the making.

Pretty much gunk and easy to make, hardly expertise. I watch the show on a daily basis. I could whisk up some beans and toast and tell people that I put care and attention into making it.

Anyway not to go any more off topic. I do like the look of the ribs but I can't help thinking the joint is over cooked. How was it when carving it up?

I did a smoky cajun shoulder de boned and tied a few weeks ago, rubbed and cooked for 8 hours lid on webber about 1&1/2 bags of charcoal, it was fantastic, the pork just fell to pieces, I'm salivating now I think I'll plan a nice one for the weekend.

just becuase it's cheese filled burgers does not make it dgunk.

The show is split into two halfs, one good local grub fest type places, the second half teh challenge.

Nearly all the places make there stuff on site, from scratch with fresh ingredients following traditional recipes and cooked in traditional ways. just look at the BBQ places he goes. 24hour smoked meats in there own smokers. The massive wood bbq pit. Chillis for burger/hip toppings made on site from scratch not using spice blends Even a lot of the burgers are made on site. Even one place that had a sour dough going for several decades which she makes bread from daily.

Looked fantastic until you burnt it :(.

it's not burnt. That is the rub and the bbq effects. It is the best part of it.

Looks good, I rarely can devote an entire day or so to food.

A nice dark flavoursome 2-3mm ring around the outside, in America they some times cut this bit off.

Has that come out black on the photo, or was that really it burned? :p
 
I know it isn't gonna be the same, but I'm guessing this could just be slow cooked in an oven then finished on a BBQ for a bit of BBQ taste?

Anyway it looks awesome!
