I've cooked chicken straight from defrost and it's fine.

Just make sure it's white all the way through

Does it need to be fried? Easier to wrap in foil with some herbs and chuck in the oven for 45 mins.

When you microwave using the defrost setting place the chicken down on the plate so that there is as little of the chicken touching the plate as possible. Chicken brest tends to have a natural curve to one side and that's the side I place face down as this minimises the amount the chicken that's cooked by the microwave.
