Cooking for one

me and gf do this as no one likes to cook proper when u get home from work.

we make currys, pasta and sauce, pies.

best thing about the curry is:

make your curry as normal.

buy packs of microwave rice.

put half rice + half curry in tubs.

home made microwave curry :)

it lasts 3-4 days.
 
This is the stew I make every now and then, goes very well with Yorkshire puddings:

Four servings

Ingredients

1lb (450g) of stewing steak
1 or 2 large onions chopped
2-3 carrots sliced
1 turnip roughly chopped
2-3 parsnips
3 tablespoons of tomato puree
Any number of potatoes chopped
3 tablespoons of cooking oil
2 tablespoons of flour
Salt & pepper
3/4 - 1 pint of beef stock
3/4 pint of sherry, port beer or red wine (I find port the best)

Method

1. Fry all veg in 2 tablespoons of oil in a large saucepan or stock pot for about five mins.
2. Remove from pan to warm dish.
3. Cube steak and place in a polythene bag with flour, salt and pepper - shake well to coat.
4. Quickly brown meat in the pan with 1 tablespoon of oil, turning all the time.
5. Return veg to the pan with the meat add any left over flour from the bag and the tomato puree. Stir well then add the stock and alcohol.
6. Transfer to a casserole dish and whack in the oven for 2 hours on 170-180 celsius (check every half hour to make sure it doesn't dry out)

Tastes great and really fills you up! :)
 
Things like lasagna, bolognese, shepherds pie, chill and pasta bakes are really easy to make and are good for freezing.

I generally make about one of these a week and the rest of the nights I have chicken and pasta as its easy to cook! :)
