Cooking ideas - got chillis - lots of them!

Do you need to cut the chillis and take out the seeds first, or just cut off the top?

Depends on how hot you like things!
I just whole chillis in the food processor because I like it a bit spicy, but feel free to get rid of the seeds if you don't want it quite so hot.

Another thing to do with chillis is to make some salsa, I did a nice pineapple salsa earlier to be used with a bbq later.

Finely slice up a few of spring onions.
Finely dice a red onion and about 200g of pineapple.
Add a finely diced red chilli and a good handful of chopped coriander.
Then add tablespoon of honey, a tablespoon of light soy sauce and a teaspoon of lime juice.

Combine it all in a bowl and leave to let the flavours infuse for a little while and then serve.
Goes well with pork and chicken.
