GR is an amazing chef no doubt about that - I've eaten in his restaurants. But anything other than blue or very rare is sacreligious! It's nothing to do with trying to be alpha.

2-3 minutes each side is perfect with 5 minutes to rest the steak, of course prior to cooking let the steak reach room temp so that it relaxes.
