Cooking with AH2: Fake Christmas (pic heavy)

Yeah, it's surprisingly straight forward (so far!). The most awkward bit was puree'ing the mushrooms as I only have a blender, and it just got clogged up. Next time, maybe not do 500g of mushrooms at once. Not entirely sure I got the wrapping done right, but it's sitting in the fridge chilling and I'm having a glass of wine before moving onto the next step.
I've been taking some pictures, so will open my own thread once it's done and stop cluttering yours! :D
 
What cut have you used for it in the end?
I'd have thought that rolled sirloin with the fat trimmed could work, but most other things you'd be struggling to get it cooked right.
