I disagree, whilst your first dish does look good it is dominated by the rice. The chicken should be the main attraction. Plus, you didn't say how you seasoned it. Was it just S&P? I recommend a herb crust.

I would go for 1 - 1.5 breasts but I tend to just have massive amounts of the accompanying carbs such as rice or pasta.

Im only 23 but everyone keeps telling me that im going to be a chubber by the time im 30 with the amount I eat. I sit at a desk all day but have a quick metabolism and exercise a fair bit so fingers crossed!

Don't be fooled by that picture, the plate is huge, there's 125g of couscous there (not rice) and the chicken breast is off a medium sized chicken. I just used S&P for seasoning and it was fried in butter, olive oil and garlic.

I don't see the problem there.... and some of us love rice. One chicken breast is enough for me if you're being sparing.

EDIT: yeah, the butter and/or olive oil would add a lot of weight to the dish. You wouldn't feel hard done by.
 
Another great value meat we use is large packs of bacon - I generally buy a Kilo at a time and then seperate it out and freeze it. Bacon adds tons of flavour for a relatively small input of meat.

PS Definite kudos for making proper stock. I almost never bother but it is deeply yum when you take the time.
