Cooking with Haircut: Chocolate Brownies

Someone was asking about brownie recipes a little bit ago, I made some today so thought I'd put the recipe up along with some photos.
It's a pretty rich recipe and quite fudgy.

First off the ingredients, you will need the following:
40g caster sugar
120g golden syrup
120g butter
100g chocolate (preferably 70% cocoa solids)
2 eggs
30g chopped walnuts
30g chopped pecans
30g plain flour
40g cocoa powder
1/2 tsp baking powder
1tsp vanilla essence (try to get the essence made from real vanilla rather than just flavoured, of course if you have a real vanilla pod to use then use this instead)

Firstly preheat your oven to 180 degrees C and line a tin with baking paper.
The tin I have used for this amount of mixture is 18cmx23cm

Put the sugar, syrup and butter into a pan.

Melt then on a low light until the butter has just melted and sugar dissolved. It is important not to go overboard with the heat here, probably best to turn the heat off before the butter has finished melting.

Then break up the chocolate and place into the mixture, the residual heat will be enough to gently melt the chocolate.

Next beat up two eggs, add these to the mixture and mix in well
By this stage the sugar, syrup, butter and chocolate mixture should be warm, not hot. If it feels hot to the touch leave for a few minutes to cool otherwise you could end up with scrambled eggs in your brownie!

Should look something like this once the eggs are mixed in.

Next stage is to add the chopped nuts and vanilla essence, stir these in to the mixture.

Then add the flour, cocoa powder and baking powder.
Fold these in gently with a metal spoon until it's all mixed in.

Once it's all mixed in transfer the mixture into your tin and place in the oven.

Bake for around 20-25 minutes.
You should be able to stick a knife into the brownie and pull it out without any mixture sticking to the knife.

Once cooked leave for a few minutes in the tin and then transfer to a cooling tray.
It's important not to try and cut it up while it's warm as it will just fall apart so leave for at least half an hour or until it's cooled.

Then cut up into pieces and serve

They look pretty damn good, i'm going to be a making a batch either tomoz or monday, i'll try and post some pics as i haven't found any brownies yet which have tasted better than mine! Your's do look very very good though! I want some now :(
 
that was me that asked for brownie ideas, my god they looks lush!!!!

i did end up finding a better brownie mix in the end though, granted they didnt look half as satisying as those do, but the only "mix" worth using is the cadbury one....anyway.....how much would you charge as a personal chef? :p

Just make them yourself, there so, so easy to make and far nicer than any pre-mixed rubbish. As well as dirt cheap to make.
