Looks fantastic. One question though, any reason why it needs to be left to stand on tin foil?
It's always a good idea to let a piece of meat rest after cooking.
The meat itself relaxes allowing the juices to soak back into the meat, providing a far juicier texture than if you were to cut into it and eat as soon as it had been cooked.
Tinfoil is usually a good means of keeping it warm during this time
