A bit of experimentation really, glitch. The pressure cooker came with a guide that gets you started with beef stews and stuff, but I've over- and under-cooked a few things, and I use it quite a lot so I can gauge what's about the right time now. It also seems to vary a bit between pressure cookers. Heston said to put oxtail on for two hours, but mine would destroy it in that time. 35-40 minutes maximum. Mine is a big aluminium Prestige one, the old type that you stack the weights up on top
