Cooking with Jonny69: baking bread.

We got given a breadmaker yesterday (older Breville BR1) and I currently have it set on timer so there is a multi-grain loaf ready for me when I get home.

Along with a big batch of beef & barley soup in the slow cooker, tonight is looking to be delicious on the dinner front :D
 
A couple of weeks ago I made some lovely Christmas buns (basically Chelsea buns but with cranberries and apricots and a lemon icing). Yesterday I made a Rye and Ale (Fuller's Spitfire) bread. Had an issue with it when left to prove. It flattened out slightly, I think due to the fact that I had to move it onto the baking tray after adding the ale batter topping, and this may have upset the shape. Anyway, it tasted lovely. A real nice flavour of ale, slightly sweet, and a nice rye bread texture. Perfect with a smothering of butter.

 
Morning all. I'm haing a go with this today:

500g strong flour
5g yeast
300ml water
10g salt - will add after 1st prove

I've mixed and kneaded for about 12 minutes. After about 5 minutes the dough became incredibly sticky and elastic and was difficult to work as it just gummed my hands up. I had to use a little additional flour to free my hands. It doesn't feel wet at all though.

Is this normal?

Thisi is the exact recipe I used. It actually looks like mine but not quite so shallow. Really tasty bread!

I recorded Paul Hollywood's bread in HD and I'm looking forward to watching it. I guess it will be a lot of recipe's from his books which is fine, as it's the bread making technique which I'm interested in, and also to see what the dough it like in comparison to mine.
 
Pain Au Raisin some with raisins and some with choc chips.

Does the bread really taste that much better? Genuinely curious.


I stepped up the other day and purchased some tiger bread from morrisons (freshly baked, 80p a loaf). The difference in taste between that and the usual 47p loaf I get was immense!
 
When baking your own bread its more than just the taste, its knoeing what in it and its the satisfaction that you made it and its awesome! You cannot beat the smell of fresh bread in the house

The smell alone has sold me! :D

Problem is: I don't have a blender or mixer. Is it okay to do by hand or am I asking for trouble?
