Cooking with Jonny69: Bangers, mash and a killer onion gravy

One thing that I have found that is nice with bangers and mash is Tesco Finest Caramalised Onion relish from Tesco (probably a competitor somewhere along the line :/).

Goes really well.
 
i always have demi glaze in cos im lazy

cook of a roughly sliced onion with some lard and a nob of butter.
add a pint beef stock (as above knor is good if you havnt got fresh)
add a small glass of nice red wine (never use wine you wouldnt drink) i hate it when ppl say that the wine isnt nice and they will save it for cooking
a healty amount of basil and oregano
2 tbs tomatoe puré
mix some demi glaze and add (its just corn flour and brown tbh)

also a nice alternative is to only cut the onions into quaters and boil them in the stock for 20 mins. make for a enhanced onion gravy

I'd start with a lager but basically it's quite a strong tasting gravy so it can support stronger beers. A bitter would make it slightly hoppy and quite rich and a stout would turn it dark and malty, both will compliment the onions. You probably wouldn't want a whole bottle of stout in there, just half.

Just to back this up, a housemate wanted to cook some potatos, baked I think.

After a minute or two of inspecting the bag of potatoes, he turn to ask me "Where are the instructions?"

Red onion gravy is the best.....

fry red onions in a little butter, on a low heat for about 15 mins (until translucent).
Add balsamic vinegar - fry the bejesus out of it until the vinegar has reduced.
Add a little water and stock cube. Boil until thick. Serve.
