Cooking with Phil: Home made Pizza!

pizzas look awesome, when I make home made pizza I usually dont use allot of sauce but lots of cheese, spicy pepperoni, mathesons spicy sausauge, spicy ground beef and then topped with some chillies and chilli sauce.

its lovely.
 
Some rather tasty looking pizzas... not made any for years so will have to give this a go this week! I always find it hard to find nice pepporoni and the right sort of cheese to get the toppings right :(
 
Every time Ive made my own pizza they have failed. The tomato puree tastes crap compared to pizzas from takeaways.
 
ive never seen a pan method of cooking? who does this?
i use a stellar pizza tray - big heavy round baking tray with lots of holes in the bottom - lets the bottom get really crispy
the jamie oliver method is to heat up a slab of marble and use it as a baking tray - to get the authentic 'pizza oven' base - i can't be bothered with this much effort!!

It's ostensibly the same as Jamie Oliver's but subtly different.
 
Okay I'm about 3/4 the way through, I'm made my dough (it just needs to rest for 30 mins now) and the tomato sauce is done too.

It's going to be a pepperoni and jalapeno pizza :)

I'll see if I can take a few snaps when it's done :D
 
The methods that Freefaller linked to is very good - in particular using a dough that has been left to rise very slowly in the fridge for 24-48 hours develops fantastic taste. When doing it this way you don't need to add any sugar or oil - just water (around 60-65% of the weight of the flour used) salt and yeast.


If you want to get obsessive (as I am in case it wasn't immediately obvious) you can order some flour here http://www.shipton-mill.com/ - in particular the French Type 55 flour (usually used for baguettes) has really good flavour

Also rather than using tomato paste you can make a good sauce by removing core/seeds from tinned tomatoes and rinsing them before blending - you can add a little sugar to counteract the bitterness plus some salt and oregano.

On the subject of food, has anyone tried a Dorset Naga jalfrezi? I made one the other day and it totally blew my head off, ate it all though! nice!!!
 
As a pizza (the hut) fan, why didn't I see this thread on Friday!? :( I never eat pizza's the day before work, so I'm practically drooling here! :o
 
So it's bean eaten (well half of it!). And it wasn't bad, but it wasn't great either. No pics unfortunatley. Plus I'm now half flour have man, I'm covered in the stuff. I didn't seem to cook evenly, so the middle didn't rise as much as the crusty corners.

I still prefer dominos, sorry!
