I have a EK 360 Kit coming, and it comes with 100ml of EVO Clear concentrate.
I do not believe this will be enough for the loop which will also contain a EK480xe rad.

It appears the EK-EVO range of liquids is now EOL (is this the case ?) , so am I better off with the newer EK cryo fuel or mayhems? And discarding the included Evoclear ?

Colours etc I don't care about. It's for cooling noting else. I see a lot of the liquids are now organic and have a limited shelf life, which whilst sounds lovely and friendly it does suggest they will require a lot more maintenance due to the diminishing performance over time. Are there other sensible options I have missed ? Or should I just go with the flow.

I am a little lost as to which would be best, I am inclined to keep the loop entirely EK not from love, however I feel keeping everything the same brand may avoid potential issues.

Also the rads claim to be pre cleaned from EK, do I still require a mayhems blitz kit?

I would suggest just using regular distilled water and a piece of silver somewhere in the loop (like in the reservoir). Silver is an amazing material that both kill vampires and various microorganisms in water cooling loops.
