Currently have this motherboard: http://www.overclockers.co.uk/showproduct.php?prodid=MB-360-AS&tool=3

Was looking to upgrade from the stock cooler at some point to get better performance, something such as this: http://www.overclockers.co.uk/showproduct.php?prodid=BU-000-ZA

Question is, the motherboard had a metal backplate behind the cpu socket. How would this work out with the plastic backplate supplied with the cooler? Would the one on the motherboard need to be removed or..?
I'm quite a lazy person, with very clumsy hands. Last time I tried installing a cooler that took work (a LOT of work, was the low profile arctic freezer) I ended up killing the motherboard. If the cooler listed above requires 'effort', would I be better off going for something simple such as; http://www.overclockers.co.uk/showproduct.php?prodid=HS-069-AK

Get zalman, it's not easiest to install but it's worth it more than the other crap.
On the other hand if you have 40 to spare I remember tuniq tower was quite easy to install ( only need to screw it hard thats all ).
 
zalman is probably where I'll go. If I'm overclocking my i5 it won't be anything higher than 3.6ish. I'm not looking for 4ghz+ overclocks just yet.

My only question is where do I stand with the backplates? As my motherboard already has a metal plate of some sort over the back of the cpu socket, does anyone have experience with dealing with these?

Not sure, it should come away I believe to allow the plastic one to take its place.

Does your case have a cut out on the motherboard tray to allow easy access.
 
Pretty sure it does, although not 100% sure. it's a CM-690. I'll double check tomorrow, still have another case fan I need to fit. :)
