A someone that works for our company has done some illustrations of some characters we're going to be using for catalogues, POS, etc but we're wondering what's the best way to go about copyrighting them?

Just by being a piece of original artwork, the work is covered under copyright.

They automatically are, I thought?

I'm not the most knowledgable on this matter, but I assumed it was as simple as just stating somewhere in those catalogues etc. that all content in copyright <your company>?

Anything original you create is automatically copyrighted by you. As in, you are the copright holder of that original work. Enforcing it is where the effort is required. You can do various things to prove that it's yours should a dispute arise. If it's going to be profitable, you may wish to do so to protect your rights.
