My other half’s parents live in Mandria which is a few minutes from Paphos airport and about 20minutes drive from Paphos itself.
We’ve been to Coral Bay a few times but there are better beaches around as said, her parents have lived there for 11years but don’t go to Coral bay at all - far better options around, if you want quiet deserted beaches, Cyprus has plenty which are off the tourist track and the cafe bars there tend to be much cheaper.
One thing I would highly recommend is the Vouni Panayia Winery up in the Troodos mountains, excellent wines at good prices and they do a very informative tour along with superb food in their restaurant, being so high up the views are fantastic!

And if your up in the Troodos, pop into the Extreme View Cafe (clue in the name!) looks a bit ordinary from the road but don’t let this deceive you, the food is fantastic, reasonable prices, and the view looking out of the dining area takes some beating, Sunday is the best day to go.
Google both for the trip advisor reviews which reflect my recommendation I think.
Another while I think about it is Viklari otherwise knows as The last Castle just outside Paphos, outdoor eating (under vines to keep in the shade) with fantastic views, very highly recommended!

We go here each time we visit, pretty basic choice of food tbh (BBQ) but an eating experience that’s hard to beat.
Another thing, if you find it too hot in July & August (which it usually is) Cyprus is beautiful but still very warm in April and May before the sun has dried everything out - the colour of the countryside is starkly different to the barren desert esque scenery you find in the hot months.
Love the island, went twice last year and will be going again this year.
