correct way to configure SATA drives in bios ?

currently i have my SATA drives emulating IDE in the bios

this does mean the system sees them as IDE drives and thus doesnt need any drivers at installation

does this change the actual performance i get out of them ? and if so, what should i be setting them to.

Yeah, that's correct

No, there's no performance hit from using the legacy settings.
