I'm changing cases to give me more room to watercool in the future to a lian-li twin chamber midi tower. PSU I have is a AX760.
Spec is:
MSI Z97 gaming 7.
4790k clocked to 4.7ghz at 1.29v, can do 4.8 but temps rise quickly hence the want for full loop.
Zotac GTX1080 AMP! looking to upgrade to a GTX1080ti shortly.
2x Kingston hyperX 2400mhz 8gb ram, looking to add another 2 shortly.
2x 500GB SATA SSD's.
1x 4GB 5400rpm SATA HDD.
Corsair H105.

I was looking at installing 6x corsair 120mm red LED fans, 2x 80mm exhaust fans and a ek d5 pump.

Would my PSU provide enough current or do I need to upgrade? I've used a PSU calculator which suggests I will use 822w and should spec a 1600w PSU to remain efficient which is mega excessive in my opinion. What are your thoughts?

Whatever psu calculator you are using is crap. There is no way that pc would evet get anywhere near that power draw. The pc in my siggy along with several fans, temp sensors, 2x fan controllers and all the watercooling stuff hit a max of just under 300w at the wall when benching with the gpu heavily overclocked. This is with the cpu and memory overclocked as well. Normal gaming use is no more than 252w at the wall.
