When I started reading your post my first though was to advise you to not go down the watercooling route as speaking from experience watercooling is more hassle then what it's worth but I see your looking at AIO which does take away some of the negatives around watercooling (although you don't get anywhere near the same performance as a custom loop due to the skinny rads).IM thinking about water cooling a new pc for my son but have never built a watercooled pc and was thinking about using a aio on the cup and a aio cooled gpu say like the
