You don't have to, but why not? It's free performance.

If you run the RAM at 2:1 against the CPU then when you start the CPU will run 1333MHz and the RAM will run 667MHz (2:1), so you can go up quite a long way before you hit the rated speed of the RAM (800MHz is 1600QFSB or 3.6GHz if the CPU will take it).

this one. It's not the cheapest, but it will plug straight in to the motherboard CPU header under PWM control. If you need to economise, then I would switch to the Gigabyte P35-DS4 or the Abit IP35-Pro, both of which are a bit cheaper than the ASUS, clock just as well (if not better) and have pretty much all the features of the ASUS.

From other threads, 3.5-3.8GHz seems pretty realistic with an E6850, P5K and a Thermalright Ultra 120-Extreme.
Once you get it all up and running, leave it for a few days before you overclock it, just to be sure it's all OK. Then have a dig about in the BIOS and when you get stuck, ask again. It's actually all very straightforward once you get your head around it.
